Saving the Taste of Summer

Tomatoes dripping from their vines . . . it is time.

Herbs gathered (basil, parsley, oregano), shallots and garlic cut ....

The secret ingredient (besides heirloom roma tomatoes) is several cans of tomato paste. Don't tell.

A little girl willing to chop and dice and wash makes it all worth the effort.


A year's worth of homemade spaghetti sauce on the pantry shelves for weekly recipes involving pasta and deer sausage .... my favorite meal!

I left my canning jars in the States. For now, I will make mine one pot at a time with organic produce... but soon spring will be here "down under" and I can plant some of my own!

Love making tomato sauce and tomato soup especially...with a grilled cheese sandwich...great comfort food!
